Intrigued by this but know nothing about cognac - any advice on what standard-ish stuff to get? And any loss in using Cointreau instead of triple sec?
Depends on your budget and how much you like, or think you will like, cognac. Waitrose VSOP is excellent for the money, Courvoisier VSOP is a pretty specific flavour profile, but good for a cocktail.
 
If anyone asks, my favourite cocktail is a whiskey sour.

In reality, it's a Piña Colada. I actually prefer it not blended with ice, unless I'm outside on an exceptionally warm day (in which case I would adjust for the slightly higher dilution):
  • 40ml rum; I like El Dorado 8 year here.
  • 40-50g homemade coconut syrup (an approximation of Coco Lopez Cream of Coconut), depending on how sweet I want it at the time.
  • 100ml pineapple juice.
  • 10ml lime juice.
  • A pinch of salt, to balance the slightly bombastic sweet-sourness.
  • Long, hard shake over ice, then strain into glass.
 
I had a 'spitfire' at lunch, bit sure if that's a real cocktail or a made up name where I was. It was a cherry liqueur vodka cocktail and tasty.

2 for £15 (4pm to 7pm) in the hotel we've just arrived at, will have to go try some of there's soon!

Made-up name for whatever they are making. A Spitfire is a cognac sour, sometimes with added white wine or Creme de pêche.
