Once upon a time in america deffo, my favourite gangster film.
Some people don't rate it but I really enjoyed The Untouchables. De Niro is great as al capone and the scene at the end with the pram going down the steps is one of my favourite movie scenes.
I watched fargo yesterday and really enjoyed that.

Irreversible and Martyrs.
Possibly not the kind of 'extreme human experiences' you are thinking of but both very good, if hard to watch films.
I second Taxi Driver and also recommend City of God which is an excellent film
There seems to be a few non-gangster suggestions so I'll assume you're not just after that.

For simply brilliant films I'd suggest 12 Angry Men, The Shawshank Redemption, Casablanca and Dr Strangelove: Or How I Learned To Stop Worrying And Love The Bomb.

mine is predator you must have seen it but action films don't come any better than this watch it again
