That's nothing to do with rolling shutter, just the framerate matching the RPM of the chopper. Same reason cars in Top Gear etc look like they're driving backwards before they speed up etc.
If it was rolling shutter then the rotors would look bent or skewed... there's even an example of a helicopter in that wiki link.
It's a really annoying effect when you don't want it to happen . Matching lights is worse too, I was filming in Cyprus and I don't know if it was to do with a different voltage or light standard but everything looked like there was a rave going on because I couldn't get the framerate/shutter speed to match the light frequency.
