Unless you absolutely must be vegan, paneer is the way to go over tofu I think.

I’d probably take aubergine or cauliflower over tofu actually.

Interesting. I've never tried cooking with paneer, might give it a go one day. Sweet potato is my go to for a non meat curry and IMHO regular potatoes are also underrated in this role.
