Here we have what I call “The Rocket, with a hint of pizza”

100% flour
62% water
0.74% yeast
2.4% Salt
@10 pm Mix for 10 mins on your pizza setting then add salt and mix for another 5 turn off and leave to rest for 10, remove roll into a ball shove in a bowl cover with cling film shove in the fridge till 12:45 next day.

Split dough into 270g for a 12" Pizza, @17c I will need about 4 hours till ready.
