Mushroom and sweet potato curry. Basically a madras with some green chillies thrown in for the heck of it. Plus a teeny tiny naan to soak it up.
 
Took full advantage of daughter falling asleep on Sofa by whipping up a quick bowl of Chicken Madras, this one has come out really good.

I used less oil than yesterday but this could perhaps be reduced a little further but the Curry isn’t oily you can just see the separation it’s difficult to explain, less measuring and more of a skill full eye approach measurement wise then cooked on a lower heat and cooked for less time yet allowed sauce to cool slightly as it thickened further.


Do you ever watch Latif on Youtube? He's done loads of 'how to' videos from his restaurant kitchen. Might pick up some handy tip not in the book.
He owns my local and it's very good.

I have and do indeed! I am familiar with Mr Latif’s Inspired.

A couple of years ago followed his Base Gravy Recipe and a Chilli Chicken Garlic Recipe, Curry came out “Ok” but I think user error on my end meant I potentially burnt the Garlic, Ginger and Spices.

All BIR Curries are cooked on super high heat usually at certain stages but I had it too hot with lack of technique.

I have improved significantly, even on my second attempt.. lowering the heat slightly made it all far more manageable.

Misty Ricardo is another fantastic one to watch, I will be ordering his Recipe Book and working my way through his YouTube videos. Similar setup to Latif where he cooks BIR Recipes and videos of other Chefs step by step directly in an actual Restaurant Kitchen.

Not long now, I already have some well regarded Takeaway drivers on the invisible books (Sorry Bollywood) :cry:

Job comes with a Stage 1 Remap for their vehicle of choice for quicker deliveries :cool::cry:

I know it's great isn't it, any chance of a quick decision, Sundays not the best night but I was hoping to grab a quick pathia from the local before they close.
I gotta say, this is a masterpiece - one of the funniest things I've read on the internet in ages, well done sir!
