Thick/syrupy balsamic vinegar

Good, proper balsamic vinegar should be pretty thick. The stuff you generally get in supermarkets doesn't come close to this due to price. It's expensive stuff.

That being said, you do get Balsamic Syrup which is thicker.

Oh - ok. Yes, I have been buying supermarket stuff. So I guess the stuff from (say) a Carluccio's will do?

It's aged balsamic vinegar. I tend to buy Belazu, but it's 12 quid for a small bottle. Flavour is intense. It's not acrid like the cheapo stuff and is great for dressings.

I might try some of that as I want to get some of their harris a paste, it's been voted the best ready made available in the uk.

Thick balsamic is called Traditional Balsamic of Reggio Emilia or Modena (not to be confused with the cheap 'balsamic vinegar of Modena')
You're kidding me? I just bought some of the Modena from Carluccio's for £20 - it was heavily matured and thick (corked, wax seal).

Edit: Oh, you said 'Traditional Balsamic of..'. It might have been labelled as that, actually.

This is what I purchased:
