I've had the samsung 120gb for about 8 yrs and I wouldnt mind upgrading to 500gb but another sata drive as I have my drives on show in my case, but actually the m.2 drives are cheaper.... The m.2 drives are much faster but people dont noticed much difference going to a m.2.. Ive got my eyes on the "Crucial P3 500GB M.2 PCIe Gen3 NVMe M.2" just because its £30, but would this be a downgrade in reliability going from my samsung or am I best spending £13 more and buying the "Samsung 970 EVO Plus MZ-V7S500BW NVMe M.2"?

I dont know if ssd drives still slow down to protect themselfs if you write a lot of data to the drive, or is that a thing of the past now?

It would, yes, especially if you plan to use it for the OS. I'd recommend a drive with TLC and DRAM, SN570 is a better option (though dramless) than the P3 for a cheap drive, with TLC and over double the endurance.

"people dont noticed much difference going to a m.2"
while thats sort of true in some ways
when you have more than 1 x m2 drive
copying files between them slaughters 2.5 ssds as one example

and yes if they get too hot
or if you run out of buffer
they will slow down
