Looking for a way of getting people to log jobs the 4 choice i see are
osTicket which is a one click install with softaculous
RT:Request Tracker http://bestpractical.com/rt/ only seen screenshots but looks good
Some kind of google form
Or write my own bespoke one.

Its only a small project and will only require tickets to be entered from 2 sites from a small number of people and the tickets will only be received by 2 people.

Just looking for something a little more professional than email, that can show if the ticket is open or closed and the user can see what the resolution was.

Any thoughts on these 4 ?

I am in the security field so can only give one perspective here.

Depends if security is an issue, have you got an idea of what the impact could be if someone was able to play around with your web app, is it internet facing?.

If security is something you feel you need, then go for an off the shelf solution, they have all the canonicalisation and filtering/sanitizing processes done correctly. They've also been fuzzy tested to death, well hopefully.
 
It will be hosted on a website so I'm guessing an off the shelf solution would be better and means easier for me.
There will be 4 people logging jobs(or they could just have a site id), 2 from each site.

*These 2 different sites should not be able to see each others tickets.
*The sites should be able to see all ticket status and resolutions.
*When a ticket is submitted an email is sent to the tech.
