I have a 660 ATM and another on the way.

Ek says no to full blocks so it's going to be universals.

Question is what blocks and Bridges do I need?

I have a 360 rad ATM With a Laing ddc pump 18w I think.

Would adding a hardware labs gt stealth 280 be enough?
 
general rule of thumb is 120mm of radiator per component plus 120mm over :)

which is a rubbish rule of thumb as it takes no account of the TDP of the items you are using

a fully overclocked GTX580 will run a helluva lot hotter than a GTX660 for example

I would say that a single 360 is a bit ambitious for an i7 and 2 670's
the 670's will probably be fine with it, but the i7 might start complaining if you want a decent OC out of it

it depends what water temp and component temp you are aiming for
 
Just go for the bridge edition blocks which are longer than the standard blocks and all you need to join them is the EK-FC Bridge interconnect.
