Trying to find this ingredient for a cake

Dutch-processed cocoa powder

From this recipe:

http://www.joyofbaking.com/ChocolateMeringueCake.html

At the moment I can only find it in the USA for $10 (no idea if they ship or postage cost)

So if anyone knows of a place online or a shop that can send some would be handy indeed! Or any Dutch people that can send some would also be a bonus.

Use self raising flour instead of plain with baking powder, then there should be no problem with the cocoa powder.

Does it really matter?

A cake is a cake, It's not going to taste like **** just because you didnt use "dutch-processed" cocoa powder.

Damn I've only got a regular fixed aluminum head positioner. Think a rubber chicken would work instead?

Dutch processed simply means some of the bitterness has been removed. I expect a lot of coco powder has been treated this way. If not just add a touch of sugar.
