Would 3 GB WAN create an issue?

I would be cat6a from router (10 gig port) into Dreammachine, then 10 gig out to PC both RJ45 (happy to buy converters).

No, but if you use an SFP port for the WAN, and the other SFP port for your PC, you only have 8x 1 GbE and 1x 2.5 GbE left. If you do add a switch in the future, you'd have to connect your PC to the new switch and connect the UDM-SE to the switch from the now vacant SFP port.
