Ubuntu Server - I want to start creating scripts to automate stuff

OK, What do people generally use to create scripts? I want to start creating scripts to automate some tasks on my newly installed Ubuntu server.

So if possible could somebody point me in the direction of some good guides.

Some of the automated stuff I want to do is moving files between directories at certain times of the day.

Automatic shutdown which will take the day of the week and time into concideration (IE if its a weekday, shutdown the server @ 11pm), (if its a weekend, shut down the server at 1am) etc.

Im sure I will think of more.

Vim (or nano, emacs, echo, whatever) for creating bash scripts, cron for scheduling them.

Think I might just re-install it, luckily I didnt get that far into the configuration.

All I will need to do is re-install Ubuntu (no encryption)
Install Gnome Desktop
Install OpenSSH
Install Webmin
Install VNC
Install AV
and some other bits, thats as far as I got.
