I have both of the below:

32GB 2x16GB of Ballistix running @ 3200MHz C14 (e die)

16GB 2x8GB 8 Pack Xtreem 4000MHz plan is to try for close as possible to 3800MHz 1900 IF (b die)

Any thoughts which I should stick with? I got the 32GB for casual video editing. Ideally I'd like capacity and speed but you can't have everything!
 
That E-die should clock also to 3600MHz CL16 nicely.
And likely also further.
E-die is the second best DRAM and not that far from B-die.

Also if your concerned about gaming dual rank helps some by allowing interleaving.
(other rank can be send its own command while first rank is processing its command)

I think what you're saying is sell the 8 Pack and use that money elsewhere ;)

Is the fact they are 16GB modules an indication that they are dual rank?

Correct.
So far all above 8Gbit/1GB capacity DDR4 DRAM chips have gone to server memories and will likely continue doing so.
Meaning 16GB DIMM needs 16 chips.

With 64 bit wide memory channel memory has to be added in 64 bit wide chunks.
And most DRAM chips are 8 bit wide, meaning already eight of them makes 64 bits.
 
I'd go 32GB personally. That's what I'm currently running and can easily use above 16GB just photo editing.

I've got 4x16GB but have to drop speeds hugely to get it to boot.
 
I bought a set of 2x16GB Ballistix the other week for £99, I didn't really need them, but at that price you can't go wrong.

Crucial were selling off their old stock, they're relaunching their kits with different heatspreaders, some 2x32GB kits in addition, but I wouldn't pay those prices for the new sticks when more than likely same chips underneath.

Bargain!!
Personally I would get the 2x16GB sticks. Still fantastic gains to be had from them. My set are currently running at 3733 CL16.

Same, already had 1 set and bought another pair, too good of a deal to pass up. Currently running 64GB now at 3600MHz C16 1.41v 100% stable
 
At the moment the 2 X 16GB Ballistix is running at 3600MHz C14. Need to do more stability testing before I am sure but I'm surprised it will run at all at that.
