Unusual (but delicious) things to do with chicken, ideas?

The girlfriend is going away for a while next week so was going to cook a fancy meal. My idea of langoustine has been categorically put to death, as has any other of my ideas (including veal, venison, rabbit, etc etc). So I have chicken to work with *sigh*.
So, instead of doing a common chicken dish has anyone got any unusual, fancy looking ideas?
Or, if you have any other good dishes with the 'common meat' as the main piece then please divulge them. Sure she'd eat pig, or cow.

It's pathetic I know, and wish she'd eat the more unusual things but the eyes and what not renders the food inedible nor will she eat 'cute' or 'pet' animals.
 
I have a fantastic tandoori style chicken recipe with mint. 24 hour marinade and a doddle to cook. Nice side dish of saag aloo as well.

It might just be curry, but you can make it posh.

At work atm but can get recipe up when I get home.

The only other thing I can think of is making your own escalopes, but they are pretty fiddly and mine always explode.

Going entirely on the thread title - wear the chicken as a hat while eating ice cream. :D


On a more serious note, making your own fajita spices is really easy, and cooking the chicken strips on a griddle gives it a superb taste. I find a good mix is two parts ground cumin to one part chilli powder and one part paprika, with salt and pepper. Maybe add some lime juice to make it into a paste.
