Unusual (but delicious) things to do with chicken, ideas?

I do a tasty citrus chicken.

Take your joints of chicken and marinate them overnight in the juice of some lemons and limes, along with their zest and a bit of white wine. Drain off the marinade, and keep it to use as a sauce later, and cook the chicken even in whatever way you fancy. You can either just use the marinade as a sauce straight (it'll need a little cooking obviously!) or you can add a little chicken stock and cook it in the pan you did the chicken in to give it a slightly gravyed effect.

I serve with rice, and steamed veg and mango.
 
you could do the usual breast, wrapped with pig , and stuffed with cheese. I did do one cooked in banana leaf a while back, looks mighty impressive on the table, could dig out the recipe for you.
 
Ballotine a whole bird, then stuff with boursin and tell her you made the stuffing yourself. She'll admire the skill.

Serve with mini roast potatoes tossed in rosemary and garlic butter, and make a nice white wine sauce from a roux and chicken stock. Steam some posh vegetables like asparagus, toss in butter. Also some glazed carrots.

Garlic haters need not apply.
 
Why does this thread keep getting bumped?
In the end I just did a simple roast chicken on a barley risotto. Served with salad and a cherry jus.

It was a good combination, though I suspect the cherry jus would be better suited to duck.

Yeah, I'm planning on doing that. She's not a food type of person at all, and never really experienced fine dining so trying to get her to taste new things but it's a bit tricky!

She was very much out of her comfort zone when I took her to a fancy fish restaurant but once she got over her worries she really enjoyed it.
Hoping to go to a Michelin starred restaurant for my birthday so need to get her to appreciate that so it's not a waste of £200!
