Hi my current build is

Bitfenix Prodigy M-ATX case
i5 3570k
Asus p8z77-m
8GB DDR3 Ram
GTX 1060 6gb
Bequiet 530W PSU

Already bought a new psu
(Corsair TX650M)

Looking at upgrading the cpu motherboard and ram any recommendations?

I've seen the Ryzen 5600x mentioned and the i5-11400f

Both are good options, 5600x will end up a little more expensive but its more efficient and has greater upgrade potential. You'll want a midrange B550 board which should handle up to a 5900x without issue.

On Intel side you'll need an Z590 if you want full upgrade potential. But a B560 board would do if your not planning to upgrade.

16gb of DDR4 RAM on either side (3200 for Intel or 3600 for AMD).

The Ryzen will cost £100 more than the Intel is it worth that?

I'm happy with the gpu

I just need a Cpu, motherboard and ram and cooler £500?

Personally I'd go with the cheap Bgrade ryzen 5 3600 OCUK have at £140 (try knock them down to £120) since when paired with a GTX 1060 would won't gain any extra gaming performance by spending £110+ extra on a 5600X then you can always upgrade the CPU in 2/3 years to a 5800X or 5900X which will probably be going for less than the 5600X is going for now.

Added in a 1tb NVME SSD for the OS and your favourite games.

I think so..I read a big article on Tom's Hardware last night which was a review of 11700k vs 5800x cpu, but long part was about 5600x being best cpu right now if gaming is your focus. At end was upgrade paths for future dates...if you get an 11400, your upgrade max is a 11900k 8 core and that's it, pumps out a huge amount of heat and uses a shed load of energy..as they use more you also ned beefier mobo, so any saving on cpu is lost on the mobo part.
with 5600x, you have upgrade in future to 8 core 5800x, 12 core 5900x and all the way to 16 core 5950x if you so desire. Potential for AMD 3D V-cache to be included in am4 also, but not confirmed yet, which they say will gain an additional 15% in gaming

Hee's article, you need to go near end to get to upgrade paths etc, but at the mo AMD is the way to go I think

The smaller one is rated up to 170 TDP, 220 for the larger the 5600X is 65W TDP, 5950X rated 105W...they draw a lot less power than the intel chips as far more efficient. The smaller is more than enough, larger just be better for a future upgrade, but then is more expensive
