You can use the unlocked CPU multiplier to increase the CPU speed easily without adjusting any other setting ( well, maybe a little increase in core voltage) and use a memory divider/multiplier to get the ram speed upto 1600mhz'ish.
 
OK, how about IF I decide to go for the MSI P67A GD53 or GD65 - does anyone know if my current PSU (OCZ 600W Modstream) will handle 2 GPU's if I pick up a 2nd GTX 460 at some stage in the future?

Gonna sleep on it and order tomorrow I think! :D

At the moment its looking like one of the MSI boards and stick with the stock cooler safe in the knowledge that I can pick up a better cooler and/or a 2nd 460 down the line!

Just on the SLI part - would it have to be exactly the same make & model 460 (eg. an EVGA 1GB SC) for it to work or would any comparible make do??

Right.... took the plunge and went for the following:

- Intel Core i5-2500K 3.30GHz (Sandybridge) Socket LGA1155 Processor
- MSI P67A-GD65 motherboard
- Corsair XMS3 8GB (2 x 4GB) DDR3 PC3-12800C9 1600MHz

Keeping my Gelid Tranquillo cooler too :D

Can anyone point me towards an idiots guide to overclocking the i5's and tell me what sort of overclock I should be aiming for?

The MSI board in the guide is slightly different to the one I'm getting but I'll let you off just this once! ;)

Do you wanna pop round and do the assembly and overclock for me? (after all, you've done everything else for me!! :p)
