Upgrade assistance please

I believe it is time for me to blow the dust off my wallet and upgrade my system again.

My current setup is as follows:
i7-5820K @ 3.3GHz​
Gigabyte X99-SLI-CF motherboard​
32 GB RAM​
GTX 980 Ti​
Running 2x 2560x1440 monitors​

Problems with this setup:
Intermittent crashing of the graphics, could be age/heat/driver issues with th ecard​
Processor and motherboard are not supported for Win11​
System speeds aren't what they once were​
I thought a 500GB SSD would be sufficient for the OS...​

Usage is gaming, 3d modelling, coding and general office stuff.

Budget is around £3k max

I am thinking decent, but not ridiculous graphics, >64GB RAM and a robust processor, but have no particular thoughts on any of them.
I have no particular desire to mess about with overclocking or pushing things to the bleeding edges.

Please help steer me towards something suitable.

Could you mention the software that you use? AMD cards tend to be rather weak with Blender, for example, though I'm sure a 9070 XT would still be an upgrade on the 980 Ti and get you much more VRAM.

Intel option:
- There's hardly anything in stock to add to cart, but if you can check if a 9070 XT is suitable for your other usage then that is an attractive price for 1440p gaming.
- Note that modern motherboards only have 4, or even 2 SATA ports, if you have a lot of drives to transfer.
- PCI-E lanes are also rather limited, do you have any PCI-E cards? Sound, LAN, etc?

Thanks @Tetras, that is very helpful.
I am mainly using Fusion360 for the 3D stuff
Don't have many drives as I offload most data to a NAS.
Again, nothing unusual on the PCI-E side either.

Stock levels do all seem to be a bit low at the moment for some reason...
