Upgrade Help

Haven't upgraded this many parts in the past. Used to just be motherboard and processor and then I'd wait for the graphics card prices to go down and get one later in the year. However, my current spec is awful and hasn't been touched in years (3800+ AMD with a 8800GT)

Ideally I don't want to spend over 600 but my current first build list has gone to 800 quid! Gaming isn't really a priority that much anymore (got an xbox) but I do like the odd strategy game from time to time (waiting for Civ 5) - is the current graphics card overkill for my needs (running at 1920x1080)?

I've been doing a lot of encoding recently and with encoding comes video editing so that's why I've chosen a mid ranged but decent enough CPU.

Any ideas on where I can cut off some money and get the list down in price?

the motherboard does sli and crossfire properly.

and the psu has four pci connectors for two graphic s cards.
 
Is 4GB more than enough for my tasks? I've been using 2GB DDR for about 3 years now so surely I will notice the difference in quality
