Currently have a GTX560Ti 1gb and while it hasn't given any hiccups so far, I feel it's lacking a bit with my resolution (2560*1440).

Would I be better off going for perhaps a second hand GTX580 or just purchasing a brand new 660Ti/670? How much would VRAM take effect at this resolution?

Any information/recommendations would be appreciated :)
 
The 660ti will struggle a lot at that resolution (due to its 192 bit memory bus v the 670's 256 bit) and even more so with AA applied.
 
The 256 bit bus if the 670 is bad enough at higher resolutions and the 192 bit bus of the 660TI will seriously show how poor it is.

If you want to stay Nvidia, you would be wise to go for a 670 but my advice would be to look at the 7950, as at higher resolutions, it will benefit from a bigger memory bus.
 
I've always been an Nvidia fanboy personally, I think i'll opt for the 670 in a few months time, or perhaps something else is in the works due to be released soon?

You are shooting yourself in the foot here by taking that mentality. The general consensus is that AMD 'won' this round of GPU competition. It is well known that the 7950 performs, by and large, better than its Nvidia equivalents at higher resolutions and at a lower cost.
