1080 Ti is around the level of a 6650 XT, so I'd suggest anything from a 6800 non-XT and up, but your budget works for 4070 Ti, 7900 XT & (a little bit over) 7900 XTX.

yeah been tempted to blow the budget on a 4070ti but is it worth it so was thinking on a 3080 or drop down to a 3070ti and upgrading cpu motherboard and ram, is it worth upgrading cpu atm

Based on your budget and the games you and your son play, the Ryzen 5 5600X and the Gigabyte B550 Gaming X are excellent choices for your upgrade. As for the graphics card, you could consider upgrading to an Nvidia RTX 3070 or AMD Radeon RX 6800. Both cards offer excellent performance and would be a significant upgrade from your current GTX 1080 Ti.

If I had the choice and assuming you stay with the 8700K, then I would go for a 6800 XT. For 2 reasons: 1. from the benches hardware unboxed have done, RDNA 2 cards seem to perform better than Ampere and Ada with old CPUs and 2. you'd have to go used to get competitive prices and I'm not prepared to buy anything this costly without a cast-iron warranty.

If you plan to replace the CPU in a year or two, then I'd max out the budget and buy a 7900 XTX (but not reference/MBA, so the cheapest third party is hellhound at 1050).

NVIDIA options: If you were planning to buy a 3070 Ti or 3080 new, then I would much rather have a 4070 Ti instead.

Is it worth upgrading the CPU? My answer to that would be: replace the graphics card first and see what you think. If the performance is strong, then leave it be, but if you're disappointed...

a 8700k oc to 5.0ghz all core is only just behind in performance compared to a 5600x
if your 8700k is moderately overclocked, you will find that getting a 5600 is hence more of a sidegrade than a true upgrade
