Upgrading laptop drives with raid

Got a laptop with 2 80gb hard drives in raid (mirroring) and have bought 2 bigger faster drives to replace them with. All connections are sata. What will be the easiest way of copying the data to the new drives without having to reload the operating system from scratch?
I do have access to other computers to copy the drives in if needed and also access to a home network so could back up to that.

surely if you remove one drive and insert one new one, it will copy all the data onto the new one. then if you remove the second old one and put in the second new one it will copy the data over again.

no need to backup as the first small hard disk still has everything on it. that's at least how i understand it.
