Upgrading my build. Will it work? What impact on performance?

My current rig is:

P8P67 Deluxe
i5 2500K
Thermaltake Frio
MSI TF2 GTX 580
Corsair HX 850
8 GB 1600Mhz ram
128 GB Crucial M4 SSD
500Gb 7200 rpm HDD
2Tb 5400 rpm HDD
HAF X
50 inch 1080p Plasma TV

My upgrade is basically going to be to SLI an other MSI TF2 GTX 580 and to add 3 22inch 1080p screens for some 5760x1080 goodness. What i want to know is:

1) I assume that PSU will be enough for 2 580s, it is a good quality after all.
2) What FPS increase will I see on modern games in 1080p?
3) What setting will I have to say goodbye to in 5760x1080? I assume AA is out of the Window.
4) Will I get heat issues? What is the best fan set up for the HAF X? I currwently have it as it came.

1/The psu will easily be enough for 2 580's.
2/That will depend upon the game and how well its optimised for sli
3/google for reviews of a 580 sli on 3 screens and see what answers you get
4/not in a haf x I would have thought. Plenty of cooling in stock form.
