I'm fairly sure there is no way to do this. Easy way, use a laptop. Or just have the second screen plugged into a different computer with separate peripherals.

Run the game in windowed mode and simply bring down the console or any menu that presents a mouse cursor. Good use of Alt+Tab also works. That's the best you can hope for.

it would be cool if you could plug in two separate mouses and have a mouse cursor for each mouse - it would be possible to do if microsoft want to implement it i reckon!
