Vegan recipes?

Got a vegan couple coming to dinner at ours, figured I would make the whole meal plant-based.
I'm not all that familiar with plant-based cooking, does anyone have any recipes they can recommend?

Would need to substitute the honey to be strictly vegan, but otherwise this is one of the most delicious things I’ve eaten.

Generally “the doctors kitchen” has some very good recipe ideas for veggie and vegan cuisine.
 
If you really want to impress them, make some seitan and use that as the "meat" in your dish. You can flavour it to resemble basically any meat and then just make sure all accompaniments are SFV.
 
no fats, it was cooked rolled up in clingfilm like a sausage in water, left to cool, then finely sliced and fried, was a very similar texture to donner and very tasty. No longer vegan though, found it quite hard to stick to, lasted around a year

oooh nice. I'm going to have to try that.

not the being vegan part.. I know I couldn't do that

We normally do a bean-based chili with avocado, fried onions and peppers, and wraps - loads of recipes around. Or another favourite is a falafel, flatbread and hummus board, a salad with pomegranate goes nicely with that as well.
 
You can try and Beetroot and Apricot puree soup
Then either a vegetable stir fry or a Quorn mince stew on top of a half/half green lentils/mung bean with a sides of vegetables
Table salad so either typical green or shredded red cabbage with a sweet sour dressing or broccoli, shredded clementines and and toasted cashews
For dessert, some dairy free ice cream which you let semi melt, then crumb some halva in, mix around thoroughly and re freeze

Soup:
1 medium onion finely diced. Add salt and sauté for 5 minutes
Roughly dice 8 large cooked beetroots.
Pour 1.2l of vegetable stock onto the onions and add the beetroot. Bring to boil and then reduce heat and simmer for 20-30 mins.
Turn off heat and and blitz to a grainy texture (or smooth if you prefer). Salt/pepper to taste

Medium onion finely diced and sautéed in a separate pot. Sautee with some salt for 5 min.
Add about 500ml of smooth orange juice and 300g-400g of dried apricots. Let this simmer until the apricots start to break down (15m?) Then blitz these into a paste.

When it comes to serving, ideally use a white bowl to contrast the beetroot soup and then slowly pour the apricot from the centre out in a swirl. Visually spectacular and delicious


Main:
Stir fry you can manage or Quorn mince cook in a flavour profile you like (tomato chilli style, korma curry, madras, Mexican etc). Just sauté some onions and then some minced garlic first, add the sauce and heat until bubbling before adding the Quorn. If cooking mexican style, add a tin of kidney beans 5 min before the end. Takes about 15m (20 with onions and garlic)

Salad:
Green (use your imagination)
Red cabbage - finely shred half a red cabbage. Pour over a dressing of white vinegar and a few teaspoons of sugar (to taste). Sprinkle of salt/pepper and thats it. You can add a handful of raisins and caraway seeds if you are feeling fancy
Broccoli salad - raw broccoli break into smallish florets (bite size). Dress with a smaller amount of the dressing mentioned above (you want it more tangy than sweet). Add the broken toasted cashews (plain not salted). Then throw some broken pieces of clementines over it.
Dessert:
As described above, dairy free ice cream which you let semi melt, then crumb some halva in, mix around thoroughly and re freeze. If you want to serve a chocolate sauce on the side, feel free to buy one or make one up without milk or cream( :eek: )

I'd maybe do a Middle Eastern spread, lots of good vegan stuff.

Mejadra rice - Rice and lentils spiced with cumin, coriander, turmeric and cinnamon, topped with fried onion and pomegranite
Beetroot Hummous
Flatbreads
Bulger pilaf with roasted veg
Grilled veggies - aubergine, peppers, red onion, courgette
Tempeh shish kebabs
Fatoush Salad
Falafel
Potato Kibbeh
Toum - super garicky mayo without any egg

Can mostly be made beforehand and then just heated to serve if needed, apart from the kibbeh and kebabs. Falafel is best done fresh too but can be served cold. Looks very impressive as a spread and should be something for everyone.

As part of my new year health kick I wanted to try and eat a meat free meal every week. Slight delay in getting started but tried the green lentil Bolognese last night and it was actually really good.

Thanks, will give those a try and no not looking specifically for vegan just meat free to begin with.
 
In the end I went cauliflower "fajitas"

Basically cauliflower roasted with peppers and onions covered in a little oil and fajita seasoning.
Served with a salsa/guacamole mix and salad

Was actually quite tasty, I would make again but I'd probably add some yoghurt to the mix which makes it no longer plant based.

Plenty of plant based yoghurt.
