Vege Meal for Office

Hi All,

Just need some ideas for a Vegetarian meal (also excluding fish) for the my office - only 6 of us, so it's not that bad. Just having a bi-weekly cook-off :).

I normally eat meat in most meals, so I want something that is pretty easy and tasty. Any ideas?

What sort of cuisine are you into.

If I'm serving to vegetarians, avoid cliches (stuffed peppers, veggie lasagne) because it's all been done to death.

Falafel, fresh flatbread and a couple of other decent bits (curried vegetables/ eggs, rice etc.)
Simple stuff done right can smash complex stuff done reasonably well.

As long as there's not a vegan requirement you can have tons of nice stuff. To go with the falafel above you could get some halloumi and make awesome falafel or halloumi with tzaziki and chilli wraps.

Another nice one is firm tofu (*not* silken) cut into chunks and then fried over a high heat with garlic, salt and pepper until browned on both sides. Just as you take it off the heat, squeeze a lemon or lime over it all to give it a bit of a zing. I often have this as a starter in one of the local thai/pan-asian places (I'm an avid meat-eater but this stuff is really really good).
 
Bread is always a great start. Most vegetarians like cheese, especially the stronger varieties.

A nice soup with self-made bread may be a good start. Carrot and coriander or broccoli and Stilton maybe? That way those who are hungry can fill up on the bread.

Pizzas are quick and easy. I also like Panini is they are a possibility?
 
Good ideas guys - I like the homemade pizza idea - thing is I have to cook it at home and warm it up in a microwave!

I was also thinking a bulky vege curry - think that would be feasible?
 
If you make the currry at home and use a microwave to reheat curry's possible, what cooking devices do you have at work?
 
Just a microwave unfortunately - would prefer to re-heat on a hob or some kind.

If I make a curry, what sort of veg do you think? I was thinking potatoes, cauliflower, green beans? Any other veggies?

Made a Thai Red Vegetable curry in the end.

Used Aubergine, Courgettes, Mange Tout, Baby New Potatoes and Cauliflower.
Made the paste from scratch with, Red Bird's eye chilies, ginger, lemongrass, galangal, lime leafs, lime juice, garlic, cumin and coriander. Didn't have a pestle and mortar, so I just mash it up with a fork in a bowl with some rock salt.

Bung it all into a saucepan with some fish sauce, soy and vegetable stock. Simmered for 20 mins and then added some coconut cream and milk. Tastes lovely! Serving it with lime wedges tomorrow. Should be good.

freshly made falafel and flatbreads are immense!

Cheese and Lettuce Sandwich.

That would have been my elaborate concoction.
