Vegetable Curry

What sort of vegetables go well in a curry? Up to now i have been having chicken curry, but i am finding the cost of meat unbelievably overpriced compared to all the over products i buy.
 
Potatoes are a must. Peas, carrots, cauliflower, courgettes, spinach, chick peas etc. are also worth adding too.
 
I like a bit of fruit in my veg curry (although I guess that makes it a fruit and veg curry). Bannana chunks mix it up a bit. Mixed candied peel, currents and sultanas with a bit of lemon juice and lime juice give a nice citrus freshness.
 
Just bulk it up with chickpeas and/or lentils.
You can halve the amount of chicken and it tastes great.

If you do want to forgo the meat entirely I would recommend things like potato, cauliflower, courgette, plantain, aubergine and okra.

whooa, that sounds amazing. never thought of fruit but i cant wait to try it..
 
Made a curry once... Decided to mix it up... Added pineapple. Tasted awful!

Pineapple goes really well in a dhansak. That's got a sweet and sour flavour from lime juice/tamarind and palm sugar (jaggery) so the flavour of the pineapple really works.

Broccoli, mushrooms, spinach, onion and (chopped) tomatoes makes a damn fine vegetable curry which has gone down well with many people :)
 
Curry without meat isn't British. When we were returning from India and all those wonderful places all those hundreds of years ago, do you think the captain said "MEN, these vegetables will not keep! We must salt and spice them!". I think not.
