Third day:
Maybe have a tour of the Doge's palace (is it worth 25 euros each?)

I don't think the Doge's Palace was that expensive. I think perhaps that price is for the 'Secret Itinerary' tour. Or perhaps it's for the audio guide? (Which we also didn't get, but is probably useful).

I didn't do it myself, but the tour takes you to places that you can't see just wandering about yourself, such as Cassanova's Prison Cell.

Thanks for all the suggestions in here, I may be leaving us short on time but we're booked into the Carlton on the Grand Canal for two nights. I did fancy Mestre to save money, but I'm taking the gf so I've spent a little extra (still 'cheap' to be fair, 480 for flights and superior room). I've got a plan set out so hopefully we'll make use of all the time there.
 
£306 Euros per night! No thanks!

Is Lido a good place/cheap to stay?

Lido is a great place to stay. Did a week there a few years back and then went over to Venice for the day. Very family and couple friendly. Food was fantastic, wine was even better, beaches were awesome.

As for Venice, yes it does cost 5 Euros for a decent Espresso and 10 Euros for a decent Pizza - If you eat & drink right in the centre. Go back a few streets and you will find it reasonable enough to suit your budget.

Both Lido & Venice come highly recommended.
 
Little update.

Had a great break, hotel was absolutely fine and I really enjoyed the place.

Definitely the right length of time (2 nights).
