I'm looking to cut down on some services to free up more memory and cpu time etc, but I have no idea what services I can do without and which are important.
Any ideas?

Heh, cheers, that was a fast response.

Another question, Vista seems to cache lots, why is that, is it necessary and required?

I must admit that with XP I've always disabled those sorts of things too. However I've got a new laptop coming in a few days with Vista Ultimate on and I've told myself that for the first few months at least I'm going to leave most things on default to see what it's like.

Vista will always cache. If you disable stuff it will just cache more other stuff... Depends on what you use most frequently. It is NOT a bad thing. 100% memory usuage is good.

Exactly. Resources such as Memory are their to be used and that is exactly what Vista does very effectively. If another program demnads these resources, Vista will happily let them out.
