VLANs vs Subnets - Why would you choose one over the other?

I've done them as part of a Foundation degree and I loved them. The course material is brilliant. The labs are very helpful.

in real simple terms they do similar things, except that VLANs operate at Layer 2 and subnets at layer 3 of the ref. model

they both seperate traffic in the simplest terms
