Wait or get Sandybridge

May as well hang on for Ivy Bridge if you can. It's so close to release now. I agree with RJC that I can't see wholesale price drops on the i5-2500K, but we'll probably see it cropping up on "Today Only" deals as retailers try to clear stock. The performance difference between the two aren't going to be very significant but newer tech is always a bit nicer to have.
 
Have you considered a Core i3 with a basic H61 motherboard? Even though they're only dual core, and you can't overclock, they have great gaming performance at stock speeds. It would be a good match for your gfx card too.

This way, you get all the gaming performance you (realistically) need now, with an option to drop in an Ivy Bridge if you like the look of them in a few months time, or let it tide you over until Haswell next year.
