DCS all the way.
The "base" game is free, and includes a Russian Su25t jet and a P51. Download it and try it out.
Note that DCS is most certainly NOT Afterburner. Assume that you'll need to put some genuine time into it to get any good.
If you like what you see, the next step is choosing the follow on aircraft.
The "simple" types are bundled within the FC3 and include an F15c, A10a, Su27, Su33, Su25 and Mig29. By simple, it's the controls and complexity. Still looks the same and has apart from the Mig29 has the same flight model. For example, to start the F15c, you turn on the electrics, close the canopy and turn on 2 engines. So 4 buttons and you're ready to taxi.
In comparison, the A10c takes roughly 5 minutes to conduct the startup sequence.
As a game, looks stunning, supports VR and is massively satisfying to learn to fly well.
Caveats are that for VR it requires serious PC hardware, works best if you use a good HOTAS, most certainly isn't easy and they're still working through a few "areas of opportunity", e.g. performance tuning, resolving the overheating on the Huey etc.
