I wouldn't be drinking RO water as it lacks, well everything.
Almost any RO system is adequate for fresh water aquarium, but if you live in a soft water area there is almost zero point. Marine is another story.
Generally speaking you either use 100% RO water or an RO/tap mix.
When using 100% RO water in the tank you need to re-buffer the water with something like Seachem equilibrium as the filter bacteria and fish need minerals to survive. You can work out how much you need by following the instructions. If you don't re-buffer the tank will crash and everything dies.
Option two is mixing RO with de-chlorinated tap water to get the desired hardness and PH. You need to do a bit of experimentation, but you'll eventually get what you want.
So doing this in a soft water area you are essentially softening the water even more then adding back hardness out of a bottle (basically pointless unless you NEED really soft water, but most fish will adapt). For hard water area's it is basically the only way of getting reliable soft water.
All of the above is only applicable to fresh water fish keeping, salt water is another beast.
