Watercooling setup

I have a CM 810 case.

Would a dual 12cm watercooling rad fit directly through the case screw holes?

I'm wondering if rad/fan can fit on the lower of the fan holes, will it hit motherboard? Or just go for single rad on the upper fan hole?

Would it be possible to have GPU & CPU cooling? Or just go for CPU?

120mm rads are not recommended.
For CPU or GPU, at least 240mm. Depending on which CPU + GPU, a 360mm could do, but that's about it.
You can always use an external bracket to install the radiator and eliminate the limitations you have, co go dremmel happy and mod the top of the case for a rad.
