Weather Turning means one thing... SOUP!

I made a batch of leek, potato and bacon soup which was lovely, although I got 2nd degree burns from my new blender exploding over my face and upper body :/

tbh I never put hot soup in a blender even if it says the blender can tolerate it. I use a hand held blender so there is no chance of it going all over me.
My favourite soup is a nice fresh vegetable soup. I think I shall pop to the market and buy some tasty veg to make soups. Has anyone ever popped all ingredients in a slow cooker and then just left it for several hours? :)
 
Made this to bring into the office last week - was absolutely amazing. I'd add a bit more stock than what Gordon recommends as it was slightly too thick:

Last night I made a soup up from things I'd bought. It was a spicy* carrot, parsnip and red lentil soup.

*it wasn't spicy, mild warmth, but the kids have to eat it as well.

It had in it:

2 celery sticks diced
1 onion diced
2 garlic cloves
12 carrots, chopped
1 parsnip, chopped
big handful of dried red lentils, soaked and cooked
stock to cover (can use just water, but I used chicken stock)
salt, pepper
ground cumin,
ground coriander
ground ginger
ground cinnamon
paprika
cayenne pepper
knob of butter

I had made the above spices in to a rub for meat, and had some left in a tub, so used some of that for this as it had all the things in I wanted anyway. Cooked it all up, lentils separately and skim the foam off the top of the lentils. Once they're cooked, chuck them in with the rest and stick blend it. Add a knob of butter at the end.

I have it here for lunch as well. Leftover will be frozen. I'm making another soup tonight. A kind of minestrone of sorts.

Made a batch of Spicy Parsnip yesterday for my lunches all week.
Though not very spicy as I forgot the chilli. Doh!
 
I bought a new massive pan, just for making soup. Did it friday night, left it cooked on the top of the cooker as I was out all day and came back and it had already spoiled. Balls. Massive waste. I was really annoyed.

More soup later then.
 
Carrot and Saffron (with just a hint of spice in there) is one of my favourites.
Butternut squash soup is great too.
Spicy roast pepper and tomato soup was what I made yesterday which turned out a success.
Think I'm going to make a spiced pumpkin soup this week too.
 
Gotta admit the girlfriend cooked up a fat Pumpkin soup the other day, was amazing in taste. Would recommend it a lot with Halloween and everything coming up now.

For me my favorite soups are -

Potato and Leek
French Onion
Broccoli and Stilton

Cullen Skink is definitely my favourite at the moment with the nights drawing in; there is just something about the intense smokiness that makes it magical.
I often make variations on roasted pepper soup throughout the year and "wet" garlic soup in the seasonal window (a lot better than it sounds).

I have started using a Heston tip to sieve a lot of the soups as a finishing touch and it does make a real difference to the end result (if you want to add any chunks of meat/veg you can take some out prior to blending and then add them back in after sieving it).
