In that case, why not just use a griddle or frying pan?
Because in a griddle or frying pan, the flames don't touch the meat. It's the direct contact between the flame and the meat that produces the distinctive chargrilled flavour.
There's clearly going to be a big difference in flavour between a gas bbq and a non-gas bbq though.
There isn't. I use both regularly and I can assure you there is very little difference in flavour. As I said, it's the flame charring the meat that gives it its flavour - it makes very little difference what creates the flame.
