Why would you go for one of these over a Razer?

I'd most definitely have one of these over ANY Razer mouse. I've got the original EC1 and it's the best mouse I've ever owned.

Difference between evo and non evo? And then EC1 and 2?

As far as I can tell the eVo has 1000mhz polling, and has a rubber coating on all of it (compared to the Black EC1) which was just on the top of the mouse; stops sweating I believe. EC1 is shaped more towards the original Microsoft Intellimouse 3.0, whereas the EC2 is more of a Razer Deathadder shape. Depends on what you find comfiest!

Both the same shape. EC2 is just smaller.

There's one problem. I ordered 4 mice from OCUK and have my current Qpad 5K aswell I think that's from OCUK also. I have tried all the mice I liked all tracked fantastically except the EC1 and EC2. Under very low sensitivity gaming these seem to skip when Razer, Logitech and Qpad mice haven't. I'm sending all the other mice back but keeping the EC1 as it feels 50X better in my hands than the others but well I'll just have to live with the problem. Have a big boogie mousemat black cloth. I thought this was a problem specific to me maybe but on youtube another guy has the same setup from me and brought the products from OCUK also and has the same issue. I decided to try my mouse on no mousepad just wood and it seems to do it on this also.
