Dead Rising - Possibly the best game on the console... or in many years for some.
Gears of War - Every Xbox360 owner should have or should have had this game at some point, awesome graphics and sound.
GRAW 2 - One of the best single-player stories I've played in years, just too short.
Rainbow 6 Vegas - Awesome single player game, some excellent free map packs for multiplayer now too.
Test Drive Unlimited - Massive driving area with more freedom than any other racing game.
Tomb Raider - The best in the series since the original. Superb.
Crackdown - Huge environment with lots to do.. superb if you love that genre.
Burnout Revenge - Best racing game in years. My game of the year last year.
Guitar Hero 2 - Fun fun fun... fun.
Oblivion - Huge storyline, almost unlimited playtime, loads to do with great freedom. New expansion available too.

There are loads of great games on the Xbox360 though!

Can't argue with the man.

I'd add:

Viva Pinata - A fun, unique and very addictive sim game. A 'Rare' classic.
Kameo - Fun adventure game with great graphics and sound. A launch title that still shines.
Call of Duty 2 - The best ww2 fps experience. Immersive, atmospheric and very memorable.
Hitman: Bloodmoney - A fantastic strategy / adventure / puzzle experience. My first and only dabble with the series but I couldn't put it down.
Chromehounds - A slow primarily mp mech game in the mould of mechwarrior 2. Awful single player experience (think of these as training missions) but shines in a persistent online war with clans battling it out for territory.

Completely forgot about those, they are all amazing, though I can't commenton Chromehounds because I've not played it, but I've seen smcshaw put enough hours into it to know it must be good.

Viva Pinata, Kameo, CoD2 and Hitman are definitely worthy mentions, as is Splinter Cell Double Agent, which I missed from my list above :).

Good recommendations so far, I'd also suggest Condemned and Gun as fun single player games - especially as they are both bargain bin material now.
