What are the "must have" older 360 titles?

If I could take only one game to a desert island with my 360 it would, without doubt be Dead Rising. Outrageously good game.

Gears Of War 1 / 2
There is rumor that a Bully 2 is coming, and will be for both the PS3 and Xbox360.
I think this and WaW2 will be my two most wants if so.
Yeah the original Gears of War is still awesome as is the original Xbox Halo. Somehow Crackdown never really did it for me although I know most people had a great time with it.

They are not 360 games, but another must have set of games IMHO is Scarface and Conkers Bad Fur day for the Xbox1.
With Scarface it has considerably better graphics on the Xbox1 than it did on the PS2.
And the voice acting is not only spot on you with think Al Pacino did it himself, but it has some great one liners.
Conkers BFD is without doubt one of, if not the funniest game ever made.
