Local butcher had run out of chicken breast fillets, so did a couple off a whole chicken they had on display.

Going to make some form of tomato/basil sauce with Courgettes and Spinach and serve that with the grilled Chicken breasts.

What are you cooking for dinner?

Pretty much same as yesterday; minted lamb chop and boiled carrots, but having a look at G|mp's meal gonna make dauphinoise potatoes with it, instead of roast potatoes.

Very simple tonight.

Breast fillet chopped to pieces and fried with onions and assortment of spices. Baked in oven with pre-cooked pasta and a lovely cheese and tomato sauce.

So settled on what i'm cooking, no real recipe - just what's laying around.

Sauteed some Onions and then diced Carrots in Olive oil, added a tin of tomatoes, about half a pint of Boullion and sliced Courgettes. Once the sauce was simmering away chopped up a mild green Chilli, added some Basil and Spinach and a pinch of Celeriac Sauce. Added a glug of Shiraz.

The Chicken breasts are marinating in Olive Oil, some Lemon Juice, Black Pepper and they'll go into a grill pan.
