What could you not do without in your kitchen?

There's a reason most professional chefs use them :)
Most TV chefs ≠ most chefs. Brands like Bourgeat are perhaps more widely used professionally.

Anolon stuff is decent (very happy with a skillet I have :)) but you're paying for the marketing, it's a retail oriented brand.
 
Gas hob. Electric ones are absolutely awful and I genuinely feel sorry for anyone that has to use one. That and my pans, like AcidHell (why did you change your name? :() below I have Anolon Pros.

I'm really happy with the ceramic hob that was left in the house we bought this year :)
 
Not really hardware... but kitchen towel.

So versatile! :p

Other than that I miss cooking on gas :(

Things never turn out right with electric hobs...well not as good!

Kitchen towel is a good one, I use loads myself, like when wiping out the halogen cooker before cleaning it with washing up liquid.
 
I was going to say gas, but I'm coping fine without it - I prefer gas though.

A good pan I think is vital - certainly one that can be used on the hobs and in the oven.
 
I think it might be the kettle. I can improvise for most of my other stuff, but not having a kettle might make me cry :(
