What food can I make that will last? (NO FREEZER)

Anything fresh cooked then immediately put in the fridge will last 5 days just don't reheat and put back in fridge.

The obvious choice is a roast joint like pork or beef that will make good sandwiches and can be repurposed to stir fries, eaten cold with oven chips added to curries etc.
 
Most batch-cooked food that one would freeze would last OK in a fridge for 5 days at least usually. I've cooked plenty of stuff and left spare portions in the fridge for days before and been perfectly edible after a nuke in the microwave.
 
Cooked chicken will last 5 days in the fridge. Use this for wraps or salad boxes for lunches.

Cook a big curry/stew/chilli/pasta sauce and eat this for dinners. Pasta will last 5 days, rice perhaps only 3-4 days.
 
I could eat chilli all week no problem. In fact I need to cook one up tonight and I'll do a large batch and will have it for a few nights.

I often do curries as well, chicken, fish etc. Or cook up a roast chicken, eat what I want, then leftovers from it can be tossed into a curry. Any casserole really though, or that type of one pot dish would last most the week.
 
Stews get better with age, to a point that is. Make a nice beef stew on a Sunday and by Thursday it will still be totally fine. Heat it up as needed.

one thing that will really save your food is removing as much air as possible from the packaging. We often have salad in the fridge for 5 days, not a mixed salad but the ingredients.
