You can learn a track layout by playing it over and over, as proven by Clarkson in Top Gear...however, it's very hard to simulate the exact feeling of the drive, + and - G's etc.

So it will teach you the turns, only really driving it will do for the rest :)

Shift 2 is only worth it if its modded. The default handling is poor.

If you go for it, then head to NoGrip & grab the community and tyre mods as they make a huge difference.

And you'll also want to lower the fov too, as its too wide by default.
