What Joystick should I get?

The Saitek Cyborg Evo is what I would go for as well, though you don't seem to be able to find the wired version anywhere, only the wireless one.
 
It looks good, and its a little bit cheaper too. Will it work fine with Windows 7 64 bit in both those games?

There are no wired versions that I can find :/

I'll probably just stick with the Thrustmaster.

Yeaup works fine with Windows 7 64bit and with both of those games. I've never used the wireless version so can't comment on how good or bad it is. The one we have is wired but is very good.
 
A throttle control is pretty essential the Thrustmaster has what looks like it could be a throttle control but it's not mentioned in the specs. There are other sticks in your price range that have better designed throttle controls including ones that can be used for twin engines (Saitek Cyborg X Stick). I used to have an earlier cyborg stick and now have the X52 controller both of which have proved reliable and well put together.
 
The Cyborg X gets a few dodgy reviews from places, but it is only budget, and it does have some nice features. Mainly the shift button which, when used with saiteks good programming software, really improves the controller by doubling up the buttons.
