What ND Filter(s)?

But how do you see/focus with the filter on? :)

I found some YT tutorial which suggested focussing, exposing on some sort of 'normal' settings, then putting the filter on and using an app like Exposure Calculator to account for your ND. I only tried a couple of times but seemed to work fine.
I set up my composition without any filter using autofocus and when I'm happy I switch the lens/camera to manual focus (you can of course do it all manually, my eyes aren't what they used to be though!). Taking care to not touch the focus ring I drop in the filter and off I go. I use the cameras self timer normally. LEE filters do an app for 6 and 10 stop filters which I use for timing.
 
Can you not use live view and make use of exposure ramping on the screen (mirrorless style) to set focus when the ND filter is fitted?
 
Anyone have any recommendations for variable ND filters? Currently looking at the Gobe ND1000 MRC 16-Layer ND Filter. I want to use it for using with outdoor flash as an alternative to using HSS.
