What Sonos gear to get....

Unless your rooms are really big Play 1 should do just fine. Buy one (borrow if you know someone with one) as soon as you can and try it in each room before you commit to buying Play 3 or 5. For your open plan area I'd be tempted to get Playbar for TV if you don't already have dedicated home cinema system.
 
If you're renovating the house, ceiling speakers + Sonos CONNECT:AMP is the way forward IMO. I assume that you're too far into the decorating for this option though?

I disagree, part of the beauty of Sonos is the portability - you can just pick them all up when you move house leaving no holes or expensive speakers. It'd be cheaper and better quality sound to run cable everywhere and use room switching than hard-wire Connect:Amps in every room/area

It's horses for courses.

Sometimes a freestanding speaker is the answer. Other times it's a player either connected directly to speakers or connecting via a surround system or existing stereo that is the best solution. That's the beauty of Sonos.

Personally though, I think direct Ethernet connect of whichever Sonos product is the best long term strategy. Use wireless only where you have no wired Ethernet option. The world is throwing more and more gear out there that's wireless. There are only so many wireless channels that can co-exist before clashes inevitably occur. Plan ahead.
 
I'll echo what others have said about the play:1 being more than enough for most rooms if, as you say the rooms that they are intended for aren't too big.

I treated myself to a playbar when I moved into the new house with the missus, really impressed with it. When I first took it out of the box I was surprised by the size of the thing, it's allot chunkier than I expected when I got it into the room. Still its sitting under the tele and I don't notice it at all now I'm used to it. I'd quite like to get the sub as well but im not sure I can justify the price of it.
