What sort of stuffing [xmas!] do you like?

stuffing ey... NOT the bedroom kind!

Moving on, what stuffings do you guys like, any top recipes you'd like to share? Im thinking about what to cook on xmas day so ideas would be appreciated! I prefer seperate stuffing balls. Is it ok to make seperate stuffing even if it wasnt used to stuff the bird?

FYI, it is to go with chicken, not turkey.

Sausage meat, onions, liver from the bird in question, spices, herbs and chestnuts.

Stuffing goes under the skin from the neck to half way down the breast.

Cook bird upside down for the first half, then turn over.

Boy am I looking forward to Xmas :)
 
To me the stuffing should be cooked seperately. I usually make stuffing balls and add some shallots to bake with a pork sage and onion stuffing till they're caramelised and sweet. They seem to help the stuffing stay moist too rather than turn into cannon balls.

I remember watching a program last year, some bloke put 9 birds in a bird, absolutely amazing from what I seen, I would have loved to try it.

ROFL. The innuendo is killing me :D

My dad makes a really nice stuffing which I think is just normal breadcrumbs, onions etc... all steeped in a mixture of Guinness and Whiskey for a wee while. It works surprisingly well with the turkey.
 
My favourite has got to be homemade bacon and chestnut (including lemon juice and onions), especially nice in the obligatory turkey sandwiches.
 
As we are having half a cow for christmas dinner this year - sod stuffing!

It just takes up space on the plate that could be used for more cow!
