I'm going to try and compile a list of half decent app's that probably should be preinstalled! I haven't had a symbian phone in about 6 months now, and i've forgotten what i used to rely on! So far:
Nokia Sports Tracker
Opera Mobile (well waiting for version 9)
TomTom 6
Google Mobile Maps 2
And so far thats it! For the life of me i know i used to have a 1gb card filled! How did i do it? :D

LCG Jukebox to replace the built in mp3 player..
Smart Movie for divx files, although hardly used..

and you've mentioned google maps and tomtom.

i tried out about 3 different other web browsers and i prefered the built in one over all of them. any reason why you prefer opera 8 (9)?

Opera 8 isn't so great, i'd say its on par with the inbuilt broswer. Better in the fact it can use mutiple tabs, but worse in a few other aspects. Opera Mobile 9 (still in production) will revolutionise the way you browse the web on you're mobile, introducing all the clever parts of the latest opera mini and more. Acting more like Opera on the desktop than ever before. I also use Opera on my PC so this can only be a good thing! Full AJAX support is on the way for starters.

Rotateme is good but I only turn it on to view photos.
Panoman to take 12 photos which show a huge landscape photo.
Blackballer to block work when at home
Totalrecall to record all my calls.
Best profiles so my phone goes into home mode at 5pm at work mode at 9am.
I also use Truphone.

EDIT - I found LCG Jukebox not to be as pretty or easy to use as the built in n95 8gb player. Also why do people use Opera? I didnt find it worked as well.

Really good list guys, but i still feel a lot of symbian app's are either very specialist, or just plain gimmicky. Not very many at all really enrich my user experience, or tie what i do in with the web (just yet). I'm still waiting for that killer app to appear and make me think, why hasn't that been done before?

One thing that really annoys me is how basic IMAP functions like saving drafts and sent items to folders are left out of the default client so i can't use GMail properly. Instead i have to try Profimail, which doesn't seem to want to connect right now and also can't integrate as tightly as the default client.

Give Widsets a try - its changed my internet browsing experience I use it everyday. I have BBC Sport, BBC News, The Guardian, Digg, The Register, Engadget etc its perfect for easy reading on the commute in the tube/at lunch. Its also got some simple widget games like Bombus (which I am rather addicted to at the moment.) Basically I dont use the internet explorer, I use widsets, and when I like a story or want to check it out in full at home or on my mobile you can bookmark a 'page'.

Thy quest is over

bzzzzzzz, schanck, schanck, buzzz, vroom, vrrom

Haha, my E51 doesn't have an accelerometer so that's still useless :p

Just installed Truphone and gave it a good beating for about an hour, call didn't drop, call quality was excellent (although odd occasion i sounded underwater to the recipient). Shame its heamoraged my battery, 3 out of 6 bars (although i don't think i was full to begin with). So maybe wi-fi calling isn't there just yet hey!? :D

Currently trying to decide between using:
Truphone (integrates very tightly, maybe too tighly for me as i won't get that much use out of it) + TurboMSN (fantastic product!)
Fring (So far i think fring is winning!)
Gizmo5 (Not *that* impressed with its layout and ease of use, but all the features are there)

Right after messing around enough, i've come to the conclusion the inbuilt SIP/VOIP client is by far the nicest use. Setting it up is a bit of a pain, but its done now, and i've got a voipcheap account (seem to be the best out there 300 mins a week to loads of landlines). TurboMSN satisfies my MSN need (as my sole IM) much better than the other two. So i'm done! Now if only i could use MSN through port80 with symbian since t-mobile don't seem to like me using it :p

Check out this little review I made aages ago - Fring and Barablu are the best.

/edit I would also add Coreplayer to the list of essential apps, however I hate Coreplayer, they are full of carp - they said wmv would be integrated..almost a year ago now and they still havent. Nevertheless there is no other Symbian app that allows you to play as many different types of video codecs (without convertion too) as Coreplayer.

I'd also say MGmaps as this allows you to use Microsoft live maps which are better than Google maps (the maps not the app)

Also MOSH is a great p2p Nokia app that allows to to download free apps on the fly - there is some good stuff on there.

Lastly have you checke out Symella - download it and see what it can do..

So far i'd say the inbuilt SIP client to be the most lightweight clean and fully integrated internet phone client, i've teamed it with VoipCheap and the TurboMSN like i said previously... Gonna install rotateme now for the few times i need to do so. Why don't nokia include this as default, the only phone i've seen this on is my previous E60 it's a simple thing and it benefits all the symbian series!

emTube is excellent! Still trying to find a signed version of rotateme, but i'm failing atm! I can wait i suppose. I'm looking at "The Filter" now too for on the go music playlist creation...

Sure it is, the SIP function is integrated but if you have a lot of Skype+MSN+yahoo contacts Fring allows you to chat/speak to all of them.

Doesnt the E51 have full flash functionality - ie full youtube, or is that just the N95? IF not Emtube does rock!
