What to do with Rainbow Trout

May go fishing this weekend to a stocked loch and should catch one or two, so any ideas what to do with the fish?

Keep it really simple. Fresh trout needs few additions. Just fillet it and pan fry in butter and olive oil (stops the butter burning). Skin side down until it looks nearly cooked all the way through then flip it over for the last 30 seconds. Keep basting it as well.

Serve with a simple potato salad. Boil new potatoes, then mix with a little mayonnaise, lemon juice and a few chives.

Smoke it. IMO trout is better than salmon.

That fresh I think it would be a shame to do anything other than a BBQ / en papillote / lightly fried skin side as above. Let the fish do the talking.

My dad used to get them all the time when I was a kid, he'd just open it up stick some lemon and fennel in then wrap in foil and bake.

Use it to lure some sort of bovine beast into a trap, whallop it and have a nice juicy steak!

I've been dying to try beetroot and horseradish cured trout.

otherwise as above, cook it with lemon and serve with a homemade tartar sauce using capers and sweet pickled cucumber.

excuse me, I didn't say reject it, I said don't eat it.

Ive been fishing stocked trout for 20 years and been a chef for 7.

when i say farmed trout is disgusting, i mean it. the pellets that are fed to the fish makes the meat taste horrible.

fish from a farm are there for one thing. to provide sport.

Unless it's wild which it won't be in the UK or is from a chalk stream give it to the cat.

Disgusting and I eat lots of fish so it's not like I'm just not liking fish.
